Carrot and Daikon Salad - Kohaku Namasu

I serve this Japanese salad like a side-dish condiment along with seaweed salad, etc., with sushi rolls and the like.



Ingredients:
  • 1 medium carrot, finely grated
  • 1 3-inch piece white daikon radish, finely grated
  • 1 teaspoon salt
  • 3 tablespoons rice vinegar
  • 1/2 teaspoon Japanese soy sauce
  • 1/8 teaspoon peeled and grated fresh ginger
  • 2 teaspoons sugar
Method:

  1. Mix  ingredients together.
