I serve this Japanese salad like a side-dish condiment along with seaweed salad, etc., with sushi rolls and the like.
- 1 medium carrot, finely grated
- 1 3-inch piece white daikon radish, finely grated
- 1 teaspoon salt
- 3 tablespoons rice vinegar
- 1/2 teaspoon Japanese soy sauce
- 1/8 teaspoon peeled and grated fresh ginger
- 2 teaspoons sugar
- Mix ingredients together.
